This is salad looks and tastes like summer to me. I made it for the 4th of July. We had some great company so I forgot to take more pictures. This salad is quick to put together and will go perfect with any BBQ.
1 cucumber sliced thin
6 large radishes sliced thin
2 green onions sliced
1 yellow bell pepper diced
zest and juice from 2 lemons
2 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp of honey
2 sprigs of basil (~ 10 large leaves)
In a large bowl combine the lemon juice, lemon zest, vinegar, olive oil, honey, and basil. Mix until all ingredients are combined. Add the vegetables and toss until coated. Serve intermediately or refrigerate until ready to serve. I would not refrigerate this over night as the vegetables begin to soften in the vinegar and so the salad is less crunchy.
