For our cheat day T and I decided to make rib and pancakes. We both had a craving for pancakes this morning but he had to go to work so we decided to have them for dinner. Ribs are a sure fire way to make me happy. You can usually find ribs that are not too expensive at the grocery store. these ones were $12 a piece. I figure for the number of meals they will make it is a bargain.
The ribs are seasoned with Tex Joy BBQ seasoning. This is one of those seasonings that you cannot go wrong with. From chicken to steak it is perfect for grilling or smoking. I smoked the ribs for the first few hours then put them in the oven at 250 until hubby came home. If you are not a meat smoker kind of person then just wrap them up win tinfoil and cook them in the oven for 4-5 hours on low. ribs are not a food that you want to chew. They should fall off the bone, and melt in your mouth.
Pancakes were just Bob’s Red Mill whole wheat pancake mix. It’s what I had in the house. Next time I’ll probably go with a gluten free version. Bob’s Red Mill is a great flour company and all their stuff is good. My pancakes had diced apples in them. T wanted chocolate chips. The girl will abide.
I also tried Yucca for the first time tonight. I had bought it a while back to expand my root vegetable repertoire. However, on further investigation I found that yucca is as good for you as a potato. So, not at all. But, being that this was cheat day, and I hate to throw away food; I figured I’d give it a try. Since it is starchy like a potato I just followed the Joy of Cooking’s recipe for french fries. Soak them for 30 minutes. Dry them, fry them, cool them, fry again. Seemed easy enough. Turns out I’m no good at frying. These came out super hard and ended up as dog treats. They tasted fine jut too hard to eat.
